King Ranch Chicken



A twist on the signature Ro*Tel recipe – a creamy, cheesy and easy casserole with that special ‘kick’ coming from Ro*Tel tomatoes and green chilies. We have made some slight changes to suit our family’s taste. Always a favorite! Hope you enjoy!

Ingredients

  • No-Stick Cooking Spray
  • 1/4 cup Fleischmann’s® Original Vegetable Oil Spread Sticks
  • 1/2 cup chopped red, orange, or yellow bell pepper
  • 1/2 cup chopped yellow onion
  • 2 cans (10-3/4 oz each) condensed cream of chicken soup
  • 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies
  • 2 pounds chicken breast, cooked and shredded
  • One small package corn tortillas (6 inch), torn into bite-size pieces
  • 2 – 4 cups shredded Mexican cheese depending on your cheese love level

Directions

  1. Preheat oven to 325°F.
  2. Spray 13×9-inch baking dish with cooking spray; set aside.
  3. Melt Fleischmann’s in large saucepan over medium heat.
  4. Add bell pepper and onion; cook and stir about 5 minutes or until tender.
  5. Stir in both soups, undrained tomatoes and chicken.
  6. Layer one-third each of tortillas, chicken mixture and cheese evenly in dish.
  7. Repeat layers twice more.
  8. Bake uncovered 40 minutes or until hot and bubbly.
