Mom’s Cheesecake

Made with cream cheese, sour cream, Cool Whip, and vanilla pudding mix, it comes together into a rich filling that sets beautifully in a ready-made crust. Finished with cherry or blueberry pie filling, it is an easy family favorite that feels classic, comforting, and perfect for holidays, potlucks, or anytime you want a simple homemade dessert.

Makes two 9” cheesecakes


Ingredients

  • 16oz cream cheese
  • 8oz sour cream
  • 8oz cool whip
  • ¾ cup sugar
  • 2 tsp vanilla
  • 2 tbsp lemon juice
  • 1 vanilla pudding mix
  • 2 cans pie filling (Blueberry or Cherry are best, or one of each)
  • 2 pre-made 9” pie crusts, or you can make your own crusts

Instructions

  1. Soften cream cheese
  2. Using mixer, gradually beat in sugar
  3. Add sour cream, vanilla, and lemon juice
  4. Beat with mixer until thick
  5. Add cool whip and pudding mix
  6. Beat with mixer until desired consistency
  7. Put into crusts
  8. Top each with 1 can pie filling
  9. Enjoy (and refrigerate leftovers, if there are any)
