Mom’s Meatloaf


Truly a classic staple of any meat-loving family. This quick and easy recipe is the classic version I grew up on, and continues to be a favorite among the less picky of the litter! I prefer using ground round, you lose less drain-off and it’s healthier!

Ingredients

  • 2 lbs meat
  • 1 tsp salt
  • ¼ tsp pepper
  • ¾ cup ketchup
  • 1 egg
  • 1 medium finely chopped onion
  • ½ cup crushed crackers or breadcrumbs
  • Additional ketchup for topping

Instructions

  1. Preheat oven to 350° F.
  2. Mix all ingredients in a large bowl.
  3. Place mixture into a loaf pan.
  4. Bake at 350° for 45 minutes.
  5. Remove from oven, and drain off excess fat.
  6. Cover top of meatloaf with a layer of ketchup.
  7. Continue baking an additional 15 minutes.
  8. Remove, slice, and enjoy with your favorite sides!
